Gluten Free Banana Pudding Recipe #GFWalmart
Gluten free version of a Southern classic banana budding.

  • ¾ cup granulated sugar
  • 2 Tablespoons cornstarch
  • 3 cups whole milk
  • 4 egg yolks
  • 1 tsp vanilla
  • ½ stick butter
  • 1 package of Glutino Animal Cookies
  • 2-3 bananas sliced
  • Meringue:
  • 4 egg whites
  • rounded ¼ tsp cream of tartar
  • ¼ cup sugar
  1. Place sugar, cornstarch and milk into a saucepan and whisk together over low to medium low heat until beginning to thicken. Do not leave the stove. The mixture will need to be stirred constantly to avoid burning and uneven cooking.
  2. Temper the slightly beaten egg yolks with the pudding mixture.
  3. Mix the eggs into the saucepan and cook for an additional 2-3 minutes. You will see the mixture become very thick and pudding like.
  4. Remove from the heat and add in vanilla and butter. Stir until fully combined.
  5. Layer the banana pudding in 6 ounce ramekins: start with pudding, top with sliced bananas, and cookies. You will want to end with pudding on top.
  6. Spoon the meringue over the layered pudding and bake until browned. You can also just broil until browned as well.
  7. Enjoy your delicious creamy treat.
