I am all for ingredients that can be used in multiple ways. One of those ingredients is olive oil. Pompeian sent me a bottle of their oil to test in a recipe. But I wanted to give you more than one way to use it! See below how I did that 🙂
The other night I had a big craving for cornbread and chili for dinner. I figured that this might be a great time to see how many ways that I could use the Pompeian Extra Virgin Olive Oil. I used a gluten free mix for my cornbread, because let’s face it…sometimes you just don’t want to measure out a thousand ingredients. It is so much easier to just dump, mix and go. This box called for oil, so I used the Pompeian as a substitute. I liked that it gave the sweet cornbread a little depth of flavor and uniqueness.
I then used the olive oil to sautee my sweet potato that I was using in my chili. Now you are probably saying “Why is she using sweet potato in a chili recipe?”. I will tell you. There are nights that I scavage my fridge and pantry and just throw items together to make a dinner. Most of the time those become our favorite dinners. There are some times though that the dinner isn’t that great and I will fully admit it.
Here is the general recipe if you want to try it out yourself(I wasn’t exact on the spices, just do it to your taste):
1 medium sweet potato diced
2 T Pompeian Olive Oil
1 lb ground Beef
Small can Green Salsa(Tomatilla Based)
Can Garbanzo Beans( Drained and Rinsed)
2 T Chili Powder
2 tsp Cumin
Salt and Pepper to Taste
I sauteed the sweet potato in the olive oil until slightly browned and softened. I then added the hamburger meat. Cook until the meat is done all the way through. Next, I added in the salsa, beans, and spices. I cooked the chili on low for about 30 minutes to really combine the flavors and make sure everything was heated thoroughly. I also checked the seasonings a couple of times just to make sure it had the flavor I wanted. You could also do a can of Rotel if you want more tomato flavor.
The chili was so good piled on top of the cornbread and then some yummy cheese!!! It really hit the spot.
Lastly, I used the Pompeian Extra Virgin Olive Oil to make a vinaigrette for my salad that I had with the chili. You can find recipes for different ones on the Pompeian website. I almost made this a 4 ways you can use it post by making an Olive Oil cake. The only thing with that is that you want to use a lighter olive oil and not necessarily the Extra Virgin which has a more potent flavor.
