I have been craving Asian food more now that I have had to switch to a gluten free diet. Thankfully I received some WorldFoods sauces on behalf of Moms Meet to test out and create some yummy new Asian recipes at home!!
I am not the best at knowing what flavor combos work when it comes to cooking, now baking is another story. When I experiment with spices, I don’t know what amount to use and what really compliments another spice especially when it comes to Asian recipes. But lately my confidence is starting to pick up a bit!
WorldFoods has a wide variety of sauces so now at home I can make fried rice, pad thai, curry, and more. Each jar has a base recipe on the back that you can then take and really make your own. This recipe has become my all time favorite, so much so I ate it three days in a row. And I am not one to eat leftovers very often.
Chicken and Veggie Lovers “Fried Rice”
This is loosely called fried rice, but contains no rice 🙂
1/2 of Medium spaghetti squash, baked and scraped (Cut in half, scrape out seeds, cook cut side down at 400 degrees for about 1 hour)
1 package chicken tenders, chopped
Two large carrots shredded
8 oz package baby bella mushrooms sliced
1 head off broccoli chopped
2 ears corn taken off cobb
1 medium onion, chopped
Gluten Free Soy Sauce
WorldFoods Fried Rice ‘Nasi Goreng’ Paste
You can prep your ingredients in the morning or the day before to make this a quick dinner.
Saute the onion until soft, add the chicken and cook through. Next add in broccoli, carrots, mushrooms and corn. Continue to cook until veggies soften slightly. Add in 4 tablespoons of WorldFoods Fried Rice ‘Nasi Goreng’ Paste as well as 2-3T gluten free soy sauce. Add in fully cooked spaghetti squash. Cook until fully combined and veggies are done to your liking. I kept mine with a slight firmness still and it was awesome.
You may need to add a bit more paste and soy sauce depending upon how many veggies you add in. The first day we ate it as is and it was delicious. The spaghetti squash makes it more like eating noodles instead of eating rice. I ate it the next two days on bib lettuce just like the lettuce wrap appetizer you can get. It really was amazing!! And you get in your veggies.
I also made a Salmon Green Coconut Curry that was pretty good too.
