We decided this week to have a get together for a good ole Sunday family dinner and game night. I knew what we would be eating, but hadn’t quite decided on a dessert. One of my all time favorite desserts is the cannoli. The creamy center paired with chocolate chips and the crunchy cannoli shell. Absolute perfection when it comes to desserts. I wasn’t about to break out the fryer to make the shells so I figured out a way to make my favorite sweet treat an easy way. The base of the creamy center for the cannoli dessert parfaits is just three ingredients: ricotta, mascarpone, and honey. I took a 16 oz container of ricotta and blended it with an 8 oz container of mascarpone and 1/4 cup honey. Stir the ingredients together and your base is ready to go.
For the crunch that you would get with the outer cannoli shell, I substituted Honey Bunches of Oats®, Honey Roasted. It brings crunchy flakes and chunks of granola with a touch of honey for a perfect flavor burst.
How to assemble the Cannoli Dessert Parfaits:
- Spoon the sweetened ricotta/mascarpone into the bottom of an 8 oz mason jar.
- Top with mini chocolate chips.
- Sprinkle some Honey Bunches of Oats®.
- Repeat layers one to two times, really as much as you can fit in the mason jar.
