The rain in Texas is starting to wear me pretty thin. Not that I don’t love a rainy day, but it is now summer and I could use some sunshine and warmth. Most rainy days I love to curl up with a book, listen to the sound of the rain, and enjoy some hot tea and cookies. I have been inspired by the warmth and comfort of TAZO® Chai Latte K-Cup® pods to enjoy some warmth for rainy days with a lovely Chai Latte and some Chai sugar cookies.

There is just something about the spicy and sweet notes of cinnamon, cardamom, and ginger with a hint of vanilla of the TAZO® Chai Latte that no matter what it is like outside, makes you feel warm and comforted and transports you to a land far away. So as my latte was brewing the other morning, I decided to make some Chai sugar cookies that would highlight the sweet and spicy nature that the TAZO® Chai Latte embodies. I love how I don’t always have to leave the house to make one of my all time favorite drinks. TAZO® Chai Latte K-Cup® pods can be bought with just the single pods for the Keurig® and add your own cream and sweetener, or they also have a two step system where you can pour powdered milk and flavoring to really transform your brewed Chai tea in a full on latte experience with flavors like Original or Vanilla Caramel. Just watching it transform as it brews is dreamy.
The Chai Sugar Cookies Recipe below takes a simple sugar cookie recipe and transforms it with the addition of spices. My little cheat is using pumpkin pie spice since it includes cinnamon, ginger, clove, and nutmeg. You are free to use single cinnamon, cardamom, and ginger as well.

I took the recipe and chai flavor just one step more by adding a light chai tea glaze. Brew a cup of regular TAZO® Chai K-Cup® pods, use 1/4 cup brewed tea and mix with 2 cups powdered sugar. Once the cookies are cooled, place them on a wire rack over a baking sheet(to catch the excess) and drizzle with the chai tea glaze.



Sitting down on the couch with a fresh Chai sugar cookie in hand, a warm TAZO® Chai Latte, and the sound of the rain outside makes me forget even for a few moments about the craziness of life. Then my kids yell at each other and the cartoon on the tv comes blaring at me. Hey it was a nice dream while it lasted 🙂 One of these days my husband needs to build me a covered porch so that I can go sit outside and really enjoy my warmth for rainy days solution.

Ingredients
- 2 sticks butter, softened
- 3/4 cup white sugar
- 3/4 cup brown sugar
- 2 eggs
- 1 tsp vanilla
- 2 tsp pumpkin pie spice
- 1 tsp baking soda
- 2 1/4 cups flour, can be made gluten free using Namaste Foods Gluten Free Perfect Flour Blend
Instructions
- Preheat the oven to 375 degrees
- Cream together butter and sugar in a large stand mixer
- Add in vanilla and eggs until mixed thoroughly
- In separate bowl combine spice, baking soda, and flour.
- Add dry ingredients into wet ingredients on low speed.
- Scoop out dough with a #60 scoop onto a lined baking sheet
- Bake for 10-12 minutes or until edges are lightly browned.
- If you want you can also add a chai tea glaze by combining 1/4 cup brewed chai tea and about 2 cups powdered sugar. Drizzle small amount over cookies.
- Makes 4 dozen cookies.
