My Version of Chili

One day last week and I was looking in the fridge for what I could make for dinner, I saw that I had some ground turkey and turkey pepperoni and the thought popped in my head that maybe I could make my own version of chili in hopefully a healthier way. I also found some tomatoes, spinach, canned black beans and a taco seasoning packet. Why not throw it all together and see what comes of it 🙂

Here is what I put together: I wish I had taken a picture, but forgot 🙂
1 pound of ground turkey
1/3 package of sliced turkey pepperoni(chopped)
1 packet of Taco Seasoning(low sodium)
1-2 cups fresh spinach, chopped
4 tomatoes (chopped)
1 can black beans (do not drain)
Brown one pound of ground turkey and 1/3 package of sliced turkey pepperoni(chopped). Once browned, I pretty much threw everything else in and cooked on medium for about 20 minutes or so. Just until the tomatoes break down. Once it was done, we topped it with a little sour cream and shredded cheese.
I have to say it was REALLY good!! Hubby liked it and I felt good that it was a little more healthy than some chilli’s can be. There are so many ways that you could change it up with different beans, cheeses, veggies, etc.
I hope that you give it a try and make your own twist on it.
If you have a great recipe that is on the “healthier” side, I would love for you to share it!!
