I went to the store this last weekend and randomly bought some meat, some veggies and also picked up some Minute Rice Brown Rice. I wasn’t really sure what I was going to do with it all, but figured I could come up with something. I had some fajita meat that I marinated in some Worcestershire sauce along with a citrus rosemary marinade and let that sit for about 30 minutes. I knew I wanted to do something with the brown rice and I knew I had mushrooms and celery and onions, so I looked through a few recipes online and came up with a mishmash of a couple of them to make Brown Rice Mushroom Pilaf.
I started out by caramelizing a medium onion and two stalks of celery in a little bit of olive oil. I like it really cooked down so this did take a bit of time, but if you like your veggies more crisp you don’t have to cook them quite as long as I did.
Once the onion and celery are soft, add in a package of sliced mushrooms and cook until the mushrooms are soft. Season with salt and pepper. Next add in a 14 oz can of stock, you can use vegetable stock to keep it vegetarian or use chicken or beef stock as well. Bring the mixture to a boil and add 2 cups of Minute Rice Brown Rice. Cover and cook on medium to low for about 5 minutes or until the broth is soaked up and the rice is tender. I also added in about 2 tsp. or so of Garlic/herb seasoning and a little more salt and pepper to taste!
When you get to this last stage of cooking the rice, you can then cook your fajita meat. most fajita meat is fairly thin so it doesn’t take quite as long to cook.
Make a big pile of the brown rice mushroom pilaf and top with the sliced fajita meat. You will have a fabulous dinner that is quick, easy and will fill your whole family up.
1 medium onion, chopped
2 stalks celery, chopped
1 package of mushrooms, sliced
1 14 oz can broth
2 cups Minute Rice Brown Rice
2 tsp garlic/herb seasoning
salt and pepper to taste
Saute the onion and celery until soft, add the mushrooms and cook until soft. Add in the 14 oz can of broth and bring to a boil. Add in 2 cups of Minute Rice Brown Rice, the garlic/herb seasoning and salt/pepper to taste, cover and cook 5 minutes, turn off the heat and let sit for 5 minutes. Enjoy!
Make different variations of the pilaf using whatever veggies you have on hand or even throw in some fresh herbs, cheese or nuts at the very end to make it super hearty! This was a quick and easy meal and has all your bases covered with protein, veggies and just a little carbs! It is great to make if you are short on time and even if you don’t plan very well like me š
