Baking a cheesecake can be so intimidating at times. Finding the right balance of ingredients with a really good crust can be tricky. And finding a good gluten free cheesecake recipe can be even harder. I try and look for ways to lighten up my recipes, so what ingredient could I use to make cheesecake just a little bit healthier?? Greek Yogurt!!

Alpina asked me to test out their greek yogurt cheesecake recipe using their Revive Greek Yogurt with Artisan Granola cups. What made me more excited to try their recipe out is that their granola is gluten free so I can actually have it!!!

I will warn you though, Alpina is only available at limited retailers but this is a great recipe that you can adapt based on yogurt available in your area. If you are needing gluten free, than this is a great brand to try out!!

You start by simply emptying the top of the lid with the granola into a food processor. I choose the Honey yogurt with Chai Spice granola. You next add in 1/3 cup of nuts. They suggested Cashews, but all I had on hand was almonds and I have to say I was happy with that choice. Next, add just a 1/2 Tablespoon of sugar and an optional 1 T of butter. I used brown sugar to give it more of a depth of flavor and I also melted the butter so that it mixed right in. Turn on the food processor to blend all the ingredients and pat in to the bottom of a 9″ pie plate.

Now on to the filling 🙂
Empty the four cups of yogurt in to a blender. Add 1/2 cup of sugar, 2 eggs, 1 T cornstarch, 1 tsp vanilla, and the zest from 1 orange. Blend until smooth and poor over crust.
Bake the cheesecake at 350 degrees for about 35-45 minutes. Cooking time will vary slightly. You want it to be set but still a little giggly. Cool the cheesecake in the fridge for 2-3 so that it can finish setting.
The result…. A delicious yummy cheesecake that will not leave you regretting your decision to have some dessert. It is smooth and creamy with a wonderful nutty crust.
Top it with some raspberries or a drizzle of dark chocolate and you have a fabulous dessert that you can be proud to serve to your family or guests. This Gluten Free Orange Greek Yogurt Cheesecake will be a recipe I use over and over again. You can change it with different flavors of yogurt and crust as well as other add-ins.
I am not always a big fan of most cheesecakes because you can barely eat a few bites without being overwhelmed with richness, but this cheesecake was divine and I ate every bite(Not the whole cheesecake, but close.. Haha)
Alpina has a Buy One Get One Free Coupon for you to try out their yogurt and maybe even try your hand at this cheesecake! Stay in touch with them on Facebook and Twitter to catch all of their latest announcements.
