Well isn’t that quite the title of a new recipe??!! I honestly was just thinking of ingredients that I would love in a dressing and of course basil and balsamic are two of my fave ingredients. I also love adding in some fresh fruit when it comes to a homemade dressing to give it a bit of sweetness without adding any sweeteners and just happen to have some delicious jumbo blueberries from the grocery store.
If you remember, I introduced my new Vitamix Explorian Series e310 Blender that I was testing out in my post about blending morning, noon, and night. I use my Vitamix EVERYDAY. I tend to make smoothies every morning for breakfast and have learned other things that I can make in there as well. Vitamix and Moms Meet sent me the personal adapter cup to use and it has changed the way I use my Vitamix even more. I am now able to blend my smoothies is the cup then just add the lid where I can drink my smoothie from the cup I just made it in. One less dish to wash… yes please. But I quickly learned I could make more than just smoothies in the personal cup adapter. I have started blending my own homemade dressing and then adding the lid for an easy pour spout. It makes it to where I can also shake the dressing up again if it begins to separate.
This blueberry basil balsamic dressing can be used on more than just salads. It would make a great “sauce” for just roasted potatoes or asparagus. Marinate some pork chops in the dressing for a sweet/sour flavor that would be great served over some rice or spaghetti squash.
To make the dressing, simply add all of the ingredients to the Vitamix personal cup then attach the adapter. Blend starting on low and moving to high until all the ingredients are well blended.
Of course, the personal cup adapter is great for your daily smoothies. The kit that you can buy comes with two cups with lids and the adapter. I am trying to go all kind of Susie Homemaker by even starting to make my own almond milk and almond butter. It is amazing to finally figure out how easy it is to make things that I too often just buy at the store for convenience. Make it a party one day with your friends and each person bring some of their fave ingredients to make all types of nut butters or even different types of nut milks. I love how a simple kitchen gadget has changed the way I do things in the kitchen.

Ingredients
- 1/4 cup fresh blueberries
- 1/2 cup basil leaves
- 3 cloves garlic
- 1/4 cup balsamic vinegar
- 1/2 cup olive oil
- salt and pepper
Instructions
- Place all ingredients in your blender and blend until smooth.
- Use the dressing for salad, marinade for meat, or sauce for roasted veggies.
