Sneaky Snack Muffins- Chocolate Chip Muffin Recipe

It can be so hard to get kids to eat the right foods. Sure my kids will eat a few types of fruits and even fewer types of veggies, but I know they could use more. What I do is take their favorite foods like chocolate chip muffins and add an ingredient here and there to boost the nutritional value. What they don’t know won’t hurt them, right?! One way that I sneak in goodness is by swapping milk ingredients in recipes with Pediasure Sidekicks. These sneaky snack muffins will sure be hit with your kids just like they are with mine.


Pediasure Sidekicks

Pediasure Sidekicks are just great on their own. My kids are notorious for not wanting much for breakfast in the morning. They can drink down a cold Pediasure Sidekick and it gives them just enough fullness to keep them until lunch time. They also like when I freeze them for a bit so they get a little icy and slushy. But what they don’t know is that I use them in a everyday recipes as well. I take our favorite boxed muffin mix and instead of the water it calls for, I use one of the flavors of Pediasure Sidekicks. For the Chocolate Chip Muffin Recipe, you can use either the vanilla or chocolate flavor. Just look at how it turns the batter to yummy chocolate.

It makes our favorite chocolate chip muffin recipe just that much better with a hint of extra chocolate. I know that my kids are getting an extra boost of nutrients in their favorite snack. I have been know to add it to pancake batter as well.

Tips for making the best chocolate chip muffin:

  • Use an ice cream scoop so that you get an even amount of batter in the liners.
  • Sub Pediasure Sidekicks for the water/milk in the recipe to up the flavor!

Using the Pediasure Sidekicks is a simple easy way for your picky eaters to get some of their daily nutrition in drinkable form. I was able to find the Pediasure in the baby food section of Walmart. Pro tip: add extra fruit and veggies to recipes by blending in baby food. Your kids and husband won’t notice if there is some extra veggie goodness added to your favorite lasagna recipe since most baby food is finely pureed. Just like they won’t notice when you add Pediasure Sidekicks to recipes.

I am a slowly reforming picky eater myself so I understand why my kids are the way they are with certain foods, so I will do what I can to add nutrients to what they do eat with the help of products like Pediasure Sidekicks. It helps to fill in the gaps that may be missing if you have a picky eater on your hands.

Sneaky Snack Muffins- Chocolate Chip Muffin Recipe

Ingredients

  • 1 box chocolate chip muffin mix or your favorite scratch recipe
  • Pediasure Sidekicks- Chocolate

Instructions

  1. Take your favorite box mix of chocolate chip muffins or your favorite scratch recipe. Where it calls for milk or water, substitute the Pediasure Sidekicks.
  2. Follow the directions on the box for other ingredients and baking times.
  3. Enjoy your sneaky snack chocolate chip muffins.
