Peanut butter cups sure are amazing creation. Good for you…No…But oh so tasty. My friend though can’t have them because she has a nut allergy. So I set out to make her a treat that is just as divine as regular peanut butter cups. So I present No Peanut “Peanut Butter” Cups.
You will need to find a chocolate that doesn’t have a nut allergy warning. Most candy barks are okay to use or Enjoy Life Chocolate Chips are free of most allergens. They also make some chocolate chunks that can be used as well. I have sampled them a few times 🙂 My friend can have sunflower see butter. So that is what I use in place of the classic peanut butter. There are a couple of ways that you can make these treats, but I opt for the easiest and less ingredients.
To start, melt 1-2 cups of the chocolate bark or chocolate chips. I start by putting it in a glass bowl and heat for one minute. I then stir the chocolate chips and heat for in 30 second intervals until the chocolate melts. To make bigger cups, place cupcake liners in a cupcakes pan or if you want smaller ones, then use a mini muffin pan and mini cupcake liners.
Place a small amount of the chocolate into the bottom of the cups and in essence paint the chocolate up the side of the liners. You don’t want it to be too thick, otherwise they will be hard to bite in to. To keep the sugar lower, I don’t add any powdered sugar to the filling like some recipes call for. When you purchase the sunbutter go for the one that says creamy. The natural one that I purchased had too much oil in it. If you like a thicker less gooey filling then you can add powdered sugar to the sunbutter, but I love how it oozes out when you bite in to the sweet treat. You will only be putting about 1-2 tsp of the sunbutter in the cup. Though you can put more if you like.
You will then top the treats with more chocolate so that it seals in the sunbutter. Again don’t make it too thick or it will be hard to bite in to. You can place the cupcake pan in the fridge so they set faster if you want to make more. Otherwise you can leave them out until the set. My friend likes to keep hers in the fridge or even freezer since she doesn’t want to eat them all in one sitting…. Well maybe she does but she has a little more self control than me 🙂
See how the filling just oozes out….Ahhhhh….
Other nut butters can be used if you are not allergic to them. I am not the biggest peanut butter fan so I have used a creamy almond butter before that was amazing!!
These treats are prefect to give away as gifts and would be great for Valentine’s Day coming up. Why buy chocolate that those will allergies cant have when you can make your own and show them how much you love them by making a special treat!
Wonderful post! How “sweet” of you to bless Shea with these! That rocks!
