If you remember last year I attended the SeaWorld Seven Seas Food Festival. It was an amazing experience to be able to walk the park, sample foods from so many different areas all while taking in everything that SeaWorld has to offer. This year the festival is back and I wanted to make a dish that reminds me of some of the foods I sampled last year and plan on enjoying again this year. This Shrimp Mediterranean Salad is quick to make and will have you feeling like you are on the Mediterranean Sea with the gorgeous views.
You can make this salad in a matter of minutes. I like to keep peeled, cleaned shrimp in the freezer that can be defrosted quickly just by putting them in a bowl with some hot water. To easily get that Greek flavor in the Shrimp Mediterranean Salad, I use Tessamae’s Green Goodness dressing. It has amazing flavor and can be used as a dressing and marinade. Pour about 1/4 cup of the Green Goodness on the defrosted shrimp and allow to sit for about 10 minutes.
Meanwhile get together your salad toppings while you wait to cook the shrimp. You can use either regular canned artichoke hearts in water or the marinated ones bring a bit more flavor. Chop about 1/4 cup worth for two salads. For the olives I go easy just using the already sliced black olives. Pair it all with some crumbly feta and you are set for an amazing salad.
To cook the shrimp, put a little olive oil in a saute pan over medium high heat. Remember that shrimp cook quickly so they only need about two minutes on each side! Place your salad greens in a bowl and pile on the toppings. Drizzle with the Tessamae’s Green Goodness and you are set to have a delightful Mediterranean inspired salad.
