So taking what is in the DISH from Rachael Ray™ Nutrish®: DISH Chicken & Brown Rice Recipe with Veggies & Fruit I came up with my easy chicken and rice soup.
Here is how to make the Chicken and Rice Soup:
I personally like to do whole roasted chicken, take the meat off, eat for dinner, then the leftover meat goes in the freezer for another meal. I showed you how to roast a chicken. This is the meat you will use for the soup, or if you don’t have time to roast a whole chicken then just cook up one large chicken breast that is seasoned with herbs, salt, and pepper. Dice or shred the cooked chicken to put in the chicken and rice soup.
- Saute one medium chopped onion and chopped carrots in some olive oil until the veggies start to soften.
- Add in chopped garlic, asparagus, shredded chicken, and chicken stock.
- Simmer on low heat about 20-30 minutes until the veggies are softened to your liking and it is heated through.
- Meanwhile, cook one to two bags of instant brown rice that will be used to add to the soup later.
- Ladle the soup into a bowl, serve the rice on the side, top the soup with garnishes like lime juice, avocado, and pesto or chimichurri
I like to keep my rice and soup separate so that the rice won’t absorb all the broth from the soup. This way you can add as little or as much of the rice as you like. I also put a tablespoon or so of either basil pesto or chimichurri to the soup to add just a little more flavor ad burst of freshness, squeeze of lime, and some chopped avocado. YUM-O!

Ingredients
- 1 chicken breast, cooked and chopped
- 4 carrots sliced thinly
- 1 medium onion chopped
- 1 bunch asparagus chopped
- 3 cloves garlic chopped
- 32 oz chicken stock
- 1-2 T olive oil for cooking
- 1 package of instant brown rice, cooked according to direction
- salt and pepper, to taste
- Lime, chimichurri, and avocado
Instructions
- Cook and chop one chicken breast or 1 cup already cooked chicken. I use leftover baked chicken that I store in my freezer just for this purpose.
- Chop all your veggies and get them ready for cooking. Slice the carrots fairly thin so that they will cook faster.
- Heat olive oil over medium heat in a stock pot, add the carrot and onion, and cook until veggies start to soften.
- Add in the garlic, asparagus, cooked chicken, and stock to the pot.
- Cover with a lid and simmer for 20-30 minutes.
- While the soup is simmering, cook the instant rice according to directions.
- Ladle the soup into a bowl, serve with rice on the side. Add toppings like lime juice, chimichurri or pesto, and chopped avocado to complete the meal.
