School is starting back soon and Little Man will be going 5 days a week. While I am excited for this new chapter in our life, one thing I worry about(among many other) is what am I going to send for him for lunch each day. He doesn’t have a very wide range of foods that he will eat. Peanut Butter and Jelly are the main lunch and dinner around here for him, but I would like him to take more than that.
The book Best Lunch Box Ever: Ideas and Recipes for School Lunches Kids Will Love by Katie Morford is a collection of recipes that you can throw together quickly and send a healthy delicious lunch for your kid each day.
What I love most about the book is that Katie starts with a basic concept of good ingredients and simple preparation. Mornings before school can be so harried and hectic and most moms just fall into the what prepackaged foods can I throw into the lunch box that will get them food in the least amount of prep time possible.
While most of the foods and recipes that she has listed in the book my kids won’t eat, I got a lot of good suggestions of ways that I can change up the basic pb&j and grilled cheese. I can package it and cut it in fun new ways that will get them excited to eat their lunch. I plan on putting new things in every once in awhile just to see if maybe they will try it out and who knows, they might decide that they like it. I know seeing other people eat different things has helped them venture out with new foods, so I am hoping that Little Man will become more adventurous with his food this year.
This book will be helpful for me as well. When it comes to lunch, I rarely know what I want and usually just wind up eating random junk instead of a balanced meal. Now I have plenty of ideas to go off of and there are lots of suggestions on ways to change up flavors.
