Best Shrimp Dip with Cilantro Lime Aioli #EasyAioli #RedGoldRecipes

Imagine a nice Spring day, you have some shrimp in the freezer, avocado in the fridge, and some Red Gold Tomatoes in the pantry… Now what can you do with them? Something light, not overwhelming and will hit all your taste buds in the best way. Well how about you try out my Best Shrimp Dip recipe with an easy aioli base. So easy, so good, and perfect for just about any day!

Start by draining one can of Red Gold Tomatoes with Lime Juice and Cilantro. That right there is flavor goodness 🙂 Add about 1/2 cup of mayonaise. I used the Olive Oil mayo. Hey guess what??!! You just made an aoili. A whateee? AIOLI… Very versatile dip/sauce/base that can be used in so many ways and can have just about any flavor combo to suit your needs.

Next up, defrost some shrimp. I think I used about 2 cups worth. I pan grilled them quickly until they were just cooked, but not overdone. Sprinkle them with a little chili salt to add a little kick.


Add the shrimp to the easy aioli, chop up one avocado and a handful of cilantro to mix in. Season to your liking with a little salt and pepper. I also added a squeeze of fresh lime. It helped bring some extra freshness and flavor to the dip. Serve it with Chips, bread, veggies… Just about anything that will let you scoop up this delicious dip!

This is seriously the best shrimp dip that I have ever had and hubby really liked it too. I always worry when I just throw stuff together if they will even turn out good or edible, but some of my best dishes have been throw together ones and one that hubby talks about me making again. I should write those recipes down more.. haha

Red Gold has some fabulous recipes to make so many different versions of aioli just by adding a few extra ingredients to their different tomatoes. So my question to you is “How do you Aioli?”
