It’s Monday… No it hasn’t been a bad one of those types of Mondays. It just means that I have hit the ground running and have a massive amount of work to do since I am about to head out town again and have about 5 blog posts to create, photo, and edit all before I leave. Lunch came around and I was hungry.. But it was another one of those I have no idea what I wanted to eat. There was plenty in the fridge and as I pulled out one thing, it quickly turned in to an Everything but the Kitchen Sink Salad. Filling and satisfying in each and every bite.
It took all of 5 minutes to put together and ahhhh heaven.
Take 1 apple, 1 cucumber, 10 cherry tomatoes, half an avocado, ground flaxseed, hemp seeds, fresh basil, crumbled goat cheese, and your favorite Italian Dressing. Chop, sprinkle, and drizzle. Then get your fork ready for some healthy, balanced eating. This is one of those salads that you could also make in the morning, put it in a container minus the dressing, then eat at lunch at work or the go.
The hemp seeds gives you some protein without adding in meat, but if you had some leftover chicken it would be fabulous in this salad as well. It really was like I grabbed everything in the veggie drawer and just put it it this salad. I had carrots too, but got lazy and didn’t want to chop anymore otherwise I would have added those. Next time I will buy some shredded carrots so that I could just throw those in.
There are times when I have too many veggies in my fridge, but it sure comes in handy when you have days like this where you have no idea what you want to eat and it winds up turning in to a lovely lunch that you are proud enough to share with others in hopes that they like it as well. I will post the recipe below so that you can save it for those days when you have no idea what to make and with just a few staples that you always have in the fridge. Oh and if you are like me and need a dressing without sugar and you live near an HEB, get their Organic Italian dressing. It is AMAZING!! I hope you enjoy my Everything but the Kitchen Sink Salad.
- 1 apple
- 1 cucumber
- 10 cherry tomatoes
- Half an avocado
- 2 T ground flaxseed
- 2 T Hemp Seeds
- 10 basil leaves
- 3 T crumbled goat cheese
- 2 T Italian Dressing
- Chop all the veggies up and place in a bowl, sprinkle the flaxseed and hemp seeds, top with goat cheese and dressing.
- Toss and enjoy this easy salad
