So now that we have a side dish and an appetizer down for this week’s grilling menu, today I want to share with you a few quick meat marinades for meat that I like to use. They will bring lots of flavor, don’t have any added sugar, are gluten free, and all around good.
First up is Flank Steak:
For this recipe I used a good flank steak that had a little bit of marbeling and is perfect for fajitas or just because.
Thai Kitchen has a Red Curry Paste that is a blend of lemongrass, herbs, and spices. It has some great flavor. I paired that with Red Boat Fish Sauce to bring in the saltiness and another layer of flavor goodness. Take about 3 tablespoons of curry paste to 2-3 tablespoons of fish sauce and rub it all over the meat. Let it marinate a couple of hours in the fridge before you grill.
Next up is Chicken:
Chicken thighs are great to use to get some good extra flavor and fat. I used the bone in and skin on kind and it worked really well on the grill. For this marinade I use balsamic vinegar and Mrs Dash Table Blends Savory. Gave it a lemony flavor to go more the Italian type route. There is no specific amount to use, but I did about 1/4 cup balsamic vinegar and 2 tablespoons or so of seasoning. You will have to add some salt too since neither of the other ones has salt. I prefer kosher salt or pink sea salt.
Lastly is Hamburger:
For this I took simple ground hamburger the 80/20 blend and used Weber Chicago Steak Seasoning. Sprinkle all over and combine it throughout. I like when hamburgers have flavor more than just on the outside of the burger. For two pounds of hamburger I used 1-2 tablespoons of seasoning. Really it all depends upon what you taste preferences are.
