Yesterday I shared with you the beginning of my grilling menu that we had over Memorial Day. The grilled prosciutto asparagus are still lingering in my head to make more since they are so easy and tasty. Today I want to share with you my grilled tomatillo salsa queso. I promise it is super easy and you can customize it based on your heat preferences or no heat like I did. My sister is allergic to tomatoes so most of the time she can’t have queso. She started making her own tomatillo salsa so that gave me the idea to use it in some white queso.
You can usually find tomatillos at the grocery store. They come with paper like outsides that you just peel back. They will be a bit sticky so you will have to wash them to get the sticky off. I love using sweet yellow onions with this recipe. Take the onion and cut it so that it is like rings. This will make it easier to grill and flip them over. I also took a small head of garlic and sliced the top off. Place them in a bowl and drizzle with olive oil.
Head out to the grill and place all the ingredients on the hot grill. I stayed close to it because the tomatillos need to get moved a lot to get all the sides toasty and slightly charred. That is what makes this salsa and gives it just that little more flavor. Once all the ingredients are grilled and softened just a bit, head inside to blend it. Throw in the tomatillos, couple cloves of the grilled garlic, the onion, and a handful of cilantro. Blend until it is all combined. I tossed in some salt and pepper to taste. Really you just have to customize it to your taste. You could also grill a jalapeno to give this recipe some heat. I didn’t this time so that my kids would eat the queso.
I did take the easy way out on the cheese for the queso and just bought the white version of Velvetta. For one block of Velvetta, I added in about 1-2 cups of salsa. Again it is all about your own tastes and how thick or thin you like your queso. Melt together and that is it! Yummy delicious tomato free queso.
- 6-8 tomatillos
- 1 medium or 1/2 large sweet yellow onion
- 1 small head garlic
- Olive oil
- 3T fresh cilantro
- Block of White Velvetta
- Salt and Pepper to taste
- Peel the tomatillos and wash the outside. Slice the onion in to rings and cut off the top of the garlic head.
- Drizzle all of the ingredients with olive oil and place on the grill.
- Grill all until slightly charred and softened.
- Place ingredients including the cilantro into a blender along with salt and pepper and blend until most of the chunks are gone.
- Add 1-2 cups of salsa to the white queso in a saucepan and heat until melted together. Enjoy your yummy delicious flavorful no tomato queso.
This makes my taste buds happy and I like that my sister can enjoy queso again. Tomorrow I am going to share quick and easy marinades for meat that are gluten free and no sugar, but still insanely delicious!!
