I am at a loss most days on what to eat for lunch. I don’t want to cook a big meal and I need something quick. With a few staples in the fridge I was able to make this quick spicy orange veggie noodle salad for lunch. The beauty of it is that it can be vegetarian or with a few additions, can be a cold/hot chicken noodle salad.
One of the main ingredients, the noodles, are Fortune Udon Noodles that are refrigerated. The noodles are precooked, so basically you will just be warming them up to add to the salad. What I love about these noodles is that you can make a quick soup in just about 2-3 minutes too. Some of the other staples that I keep around that make this noodle salad quick are:
- Oranges
- Coconut Aminos
- Fresh Garlic
- Assorted Veggies
- Rotisserie Chicken
While the water is coming to a boil for the noodles is when you will do the prep work. First up is the sauce. In a bowl squeeze the juice of half an orange. If you really want to boost the orange flavor, zest the outside of the orange and add it to the bowl. Add in about 2T of Coconut Aminos, this is just like soy sauce which you can sub if you would like. Add a tablespoon or so of Sriracha. This amount will depend upon how hot you like it. Chop 1-2 cloves of fresh garlic fairly fine as you don’t want to eat big chunks of it, as well as some cilantro. Chop some of your favorite fresh veggies like green beans, carrots, mushrooms, or whatever else you are in the mood for. Remember they will not get cooked so keep that in mind when choosing what veggies to add. Add the veggies to the sauce and toss.
Once the water is ready, add the noodles to the water and cook for 2-3 minutes. You just want to warm the noodles through. To keep this dish vegetarian, don’t add the seasoning packet that comes with the chicken flavor of noodles. We liked it just fine without the seasoning packet. Save it for another time when you want to add some flavoring to meat or other soup dish. When the noodles are finished simply drain them and add to the bowl with veggies and sauce. Your quick spicy orange veggie noodle salad is almost ready.
Toss it all together and serve right away. For a deeper infused flavor, let the mixture sit for a couple of hours or overnight. I prefer to let it sit, so I can make it the night before when I am cooking dinner and know that I have lunch for the next day. If you want some protein, add in some chopped rotisserie chicken to the mix. Yum!

Ingredients
- 1 package Fortune Udon Noodles, cooked according to directions, drained
- Juice from 1/2 orange, plus zest
- 2 T Coconut Aminos
- 1-2 cloves garlic, chopped
- 1 T Sriracha
- 1/2 cup chopped veggies( carrots, green bean, mushrooms)
Instructions
- Start water to boil for the noodles.
- Mix orange juice, zest, coconut aminos(or soy sauce), garlic, and Sriracha in a bowl.
- Chop veggies to be added to sauce.
- Cook noodles for 2-3 minutes, then drain.
- Add noodles to the bowl and toss to combine. For added protein, add in 1/2 cup chopped rotisserie chicken.
- Can be served right away or for deeper flavor let sit overnight in the fridge.
