I know you are gearing up for heading back to school and all that comes with this time of year. I appreciate all that you do, you all are rock stars!! This recipe will help with those “what do I make for lunch” days. I think salads tend to be one of the easiest things to make. They don’t have to be complicated or take a long time to prepare. In fact, it only takes about 30 minutes to prep ingredients. With the help of Ziploc® brand Storage bags with Easy Open Tabs you will have all the makings of a delicious lemon chicken salad that works for days when you only have five minutes to eat.
To start, I got several sizes of the Ziploc® brand Storage bags from Kroger. Using quart and gallon bags allows you to store all kinds of delicious salad fixings.
I use a multi-pack of romaine lettuce to make my salads (if I have leftover fried rice, I will use any extra lettuce to make lettuce cups . . . my fav). One tip I have is to use Ziploc® brand bags to help soak up any moisture, by placing a paper towel inside the bag, which will help the lettuce last longer.
The best protein to use for a quick chicken salad, is store bought rotisserie chicken. You get lots of meat for hardly any work!!
The next step is to chop up your favorite veggies and fruits. I think the more you have the better, so you have a variety of snack and salad choices throughout the school day. I am a fan of tomatoes, artichoke hearts, carrots, celery, blueberries; oh who am I kidding, I like lots :). Pack it all up in your Ziploc® brand bags squeeze out as much air as possible, and then you are set for a full week of salads and snacks.
Here is the recipe to assemble the quickest chicken salad:
- 1 head romaine lettuce chopped
- 1/4 cup carrots
- 1/4 cup chopped celery
- 1/2 cup shredded rotisserie chicken
- 1/4 cup blueberries
- Half lemon
- Italian Seasoning, Salt, and Pepper
- Start with 1 cup or more of chopped lettuce in a bowl.
- Top with all your favorite veggies and fruit.
- For your dressing, squeeze half a lemon over your salad, sprinkle with salt and pepper, add dried Italian seasoning.
