Slow Cooker Turkey Butternut Squash Chili

I was sent some Red Gold Tomatoes in order to make this yummy scrumptious Slow Cooker Turkey Butternut Squash Chili. All thoughts are my own.

Fall is finally here… Well in Texas it tells us that on the calendar, but it sure doesn’t feel quite like fall here. But still I am starting to crave warm slow cooked Fall yummy foods that will satisfy my tummy and soul. I love love love chili this time of year and when I can change it up a bit with different ingredients inside then my chili craving can last all season long without too many repeats.

With Fall though brings a super busy time of year. I have one kid in school full time, while little miss is only half days. That makes 4 trips back and forth. Now we also have both of them in soccer, so two nights out of the week at practice then two games on Saturdays. What does this mean for me? I rarely want to cook and especially not last minute before dinner time. It is better on me and less clean up when I can find more slow cooker recipes that I can throw stuff in and forget it until dinner.

Chili is definitely a recipe that I can just dump the ingredients in to the slow cooker and the longer it cooks the better it seems to taste!! Red Gold Tomatoes with their varying flavors and textures also makes using your slow cooker a breeze while adding fabulous flavor. And using a slow cooker is a great way to “clean” out your fridge of ingredients before they spoil. These are sometimes my best recipes.

I had some ground turkey in the fridge as well some butternut squash, pair that along with Red Gold crushed tomatoes and Red Gold Cilantro Lime diced tomatoes and the makings of a yummy chili would soon be in my belly.

Turkey Butternut Squash Chili
Recipe Type: Slow Cooker

Turkey Butternut Squash Chili with Red Gold Tomatoes cooked in slow cooker
Ingredients
  • 1 lb ground turkey
  • Small butternut squash diced
  • 3 carrots, peeled and diced
  • 1 medium onion, diced
  • 1 T chili powder
  • 1 tsp ground cumin
  • Salt and pepper, to taste
  • 1 1/2 cups beef broth
  • 2 (15 oz.) cans Red Gold crushed tomatoes
  • 1 (14.5 oz) can Red Gold diced tomatoes with Lime and Cilantro
Instructions
  1. Brown ground turkey on stove top
  2. Dice- onion, butternut squash, and carrots then add to slow cooker.
  3. Add ground turkey to slow cooker.
  4. Add spices, broth, and tomatoes.
  5. Set slow cooker to low and cook for 5-6 hours.
  6. Really, it is that easy and turns out so delicious. Add more or less seasoning if you like. Also you can add in some garbanzo beans or black beans to up the protein content!!

Cooking in the slow cooker is the easiest thing to do. You can check spices and salt near the end of cooking time. I don’t like to over season too soon in the cooking since the flavors need time to meld. I can’t wait to see what other chili recipes I can come up with. I am thinking a white chicken chili may be next on the list.

    My favorite slow cooker recipe is Seafood Chowder. It is so rich and creamy and easy to make.
    2 cans cream of Chicken
    2 cans cream of potato
    2 cans cream of celery
    3 cans evaporated milk
    1 16oz package of cream cheese
    1 can of lump crabmeat
    12 jumbo shrimp spicy, cut in pieces
    salt and pepper to taste
    1/2 cup sautéed onions
    1/2 teaspoon Old Bay
    1/2 teaspoon season all
    1/2 teaspoon garlic salt
